Bought this and placed the vinegar provided within. Left the bung off as the Italians do and let the oak and elements do their thing. Product was very good!
Now, for the next step, I upgraded my vinegar refills to Condimento class balsamic vinegar. This class does not have the wine vinegar and will age beautifully.
I own multiple barrels from these folks...all of the highest quality.
Recommendation for the Oakbarrelsltd Team: if this is a popular product, offer it in 2 or 3 liter options AND perhaps offer multi-wood barrels. Balsamic vinegar historically develops in stages...oak barrels...then smaller cherry...smaller mulberry...sometimes juniper...final typically oak again. Perhaps offer a 2-3 liter barrel that does it all. All (or some) of the woods in one barrel for those of us chefs that would love it in their kitchens. Just an idea...keep up the great work.
